This past weekend was fairly quiet, hubby had to work and after the kids first week back at school we were all a little tired and just wanting to zone out. We got to spend time with my nephew and my sister which was great and I actually got in a decent chat with my BFF who lives interstate and between both our busy schedules we don’t get to chat enough, (to think we used to spend endless hours and sleepovers talking about boys, now the only we boys we talk about is her 2 sons and my 1)!
I came across a recipe that sounded nice during the week and I showed it to Aspen, (my 11 year old in-house chef, aka my daughter). Needless to say she was straight in the kitchen with 8 year old April assisting, and taste testing along the way, although I think Aspen taste tested more. They are called Double Chocolate Almond Chunk Cookies, (by Robyn at The Years Are Short, she’s fab, how could she not be when she has a blog that offers recipes that involve dark chocolate?). I know sounds yummy right?
So Aspen got baking, we didn’t have the roasted Almonds so Almond slivers it was! We hit a slight hiccup when Aspen didn’t soften the butter enough, although she says she did, (it may not have helped that she was mixing it underneath the air-conditioner as it was a hot day.) So I added a little bit of almost boiling water and the mixture came back together perfectly to roll into little balls. Other than my touch of water, I didn’t enter the kitchen at all, the two girls were left to create.
And this was the result! Afternoon tea anyone?
A pretty fabulous effort for a 11 and 8 year old! And wow the taste did not disappoint, absolutely delicious!
Aspen has told all her friends at school about them and has promised to bake some nut free ones to take to school (her school has a no nut policy) next week! I guess we could add some white choice chips in, I mean you can never have to much chocolate after all.

So glad your family enjoyed these Mackenzie! I love the idea of substituting the nuts for white chocolate chips to make these safe for school sharing, and that was some brilliant thinking to add some boiling water to soften the mix – I don’t think I’d have thought of that!
